Quick & Simple

This post includes some super simple and quick recipes like:

  • Asparagus & Potatoes
  • Pesto Grilled Cheese
  • Spaghetti Squash

ASPARAGUS & POTATOES

This recipe is super simple & delicious!

Directions:
1. Preheat oven to 400°.
2. Cube some unskinned golden potatoes.
3. Put cubed potatoes in a bowl & mix with garlic powder, sea salt, and olive oil (less is more − remember you can’t take seasoning off if it’s too much, but you can always add more later).
4. Scatter seasoned potato cubes on a cookie sheet. Add butter (I use sliced sticks of butter) on top of potatoes.
5. Bake potatoes for 30 minutes − occasionally stir them up for even crispiness.
6. While potatoes are baking, cut the butts off your asparagus & season with garlic powder and sea salt.
7. Pull potatoes out after 30 minutes. Lay asparagus on top of potatoes. Add butter on top of the asparagus.
8. Bake asparagus & potatoes for 15 minutes or until asparagus is tender.
9. Let cool. Season more, if desired, with sea salt. Add a coat of Parmesan to the asparagus & enjoy!

Pesto Grilled Cheese

Tastes amazing, AND pesto…should I say more? Side note: I attempted with a griddle the first time & I definitely preferred the panini grill (plus it is a lot easier to prepare & clean up).

Ingredients:

Directions:
1. Butter the outside of each bread slice, put pesto on the inside of one slice, cover the inside with cheese.
2. If you want to get fancy, put some pizza sauce on the inside of the other slice.
3. Grill on a panini maker until cheese is melted & bread is nicely toasted.

*Make sure you use thick bread slices, like sourdough, to keep the grilled cheese from falling apart*


Spaghetti Squash

This is the simplest & healthiest option on the menu today. SO. EASY.

Directions:
1. Preheat oven to 350°
Cut the spaghetti squash (I got mine from Walmart) in half
2. Put squash halves on a cookie sheet or glass dish, open side down. Add a small amount of water (about 1 cup will do).
3. Bake squash for 40 minutes.
4. Pull squash out of the oven. With an oven mitt, turn the squash halves over & begin scraping with a fork. The shreds will come off with ease.
5. Scoop out shreds and place in a separate bowl.

Different flavors you can add to the cooked squash:
1. Regular ole faithful spaghetti sauce
2. Butter, pepper, and Parmesan cheese
